In Big Green Cookbook, the recipes are designed to help you shrink your carbon footprint … or “food”print! But not all of the recipes started out being eco-friendly. Many of them began with not-so-planet-pleasing pasts. A recipe green-over is the lower-carbon version of its higher-carbon counterpart.

Included are five seasonal recipe green-overs (the planet-pleasing “New Recipe” versions which are published in Big Big Green Cookbook) plus their original recipes (the “Old Recipe” versions which are not published in Big Green Cookbook ). They’re sure to whet your eco-appetite!

Additionally, you’ll find green-over how-to highlights for each. This shows you how I lessened the environmental impact for each recipe, such as using eco-friendlier cooking practices, selecting more plant-based or locally-produced ingredients, preventing food waste, and more. These highlights will help you create your own green-overs, too.
